About us.

It It all starts with the harvest! Our truffles are harvested between early June and late August. Meg, our clever spaniel marks the truffles where they lay hidden in the soil. We check the truffles for aroma, ripeness and colour before we harvest them. Truffles are ripe when the aroma is compelling and they have woody and sweet hazelnut tones. Ripe truffles should also be firm and black.

More on Truffles….If the truffles need longer to ripen we cover them with soil and leave them to mature. A few more frosts and they should be ready. Truffles come in all sizes. We have harvested a truffle that weighed 496 gms. But most weigh between 7 - 100 gms.Tartufo Nero otherwise known as Périgord or Black truffles are simply exquisite. Their subtle aroma is very sensual –characterised by earthy flavours, with overtones of sweet forest-floor notes. 

Their scent lifts flavours when added to other ingredients, leaving a lingering moreish aftertaste. Like all truffles,  black truffles have an affinity with pasta or eggs. We savour the first Black truffles of the winter in a traditional Périgord Omelette aux Truffles – truffle omelette. After a good rainfall during early February our truffles are erupting ! Our 2023 is looking great ! As Autumn progresses the frosts will help to ripen and sweeten our truffles. By late May - early June we will be in full harvest mode. Then we will have wonderful, aromatic, top quality truffles to deliver direct to market. Contact us by email to order your truffles or fresh truffle butter.

Several times a week we update truffle availability for that week to ensure you only get the best fresh truffles. So it is worth checking back with us on a regular basis. We use an overnight delivery (But No rural delivery- sorry) and dispatch Mondays – Thursday. The 2023 New Zealand truffle harvest will run from early June through until mid/late August.
